Banh Mi Thai style sandwich. By adding the spicy but mild Massaman curry you get deliciously spiced meat which fits perfectly on this roll with fresh vegetables.
For 4 persons:
Step 1: Cut the pork tenderloin into slices of ½ inch thick and place in a bowl. Add the Massaman curry paste, fish sauce and oil. Scoop and leave for 15 minutes.
Step 2: Grate the peel of the lime and press out. Mix the grater and juice of the lime with the apple cider vinegar and sugar. Stir until the sugar is dissolved. Add the carrot julienne and set aside for 10 minutes.
Step 3: Cut the radishes into thin slices. Mix the mayonnaise with the Sriracha sauce.
Step 4: Heat a frying pan without oil or butter and fry the marinated pork tenderloin over high heat for about 3 minutes. Cut the baguette into 4 pieces and cut the pieces open by cutting them lengthwise.
Step 5: Spread the pieces of baguette with Sriracha mayonnaise. Distributed pork tenderloin, carrot and slices of radish over the rolls. Add extra Sriracha to taste and garnish with coriander. Serve immediately.
