Preparation method
Step 1: Peel the ginger and cut finely. Heat the oil in a soup pot and fry the onion for 2 – 3 minutes. Add the ginger and red curry paste and heat for 1 more minute.
Step 2: Add the stock and coconut milk to the pan. Bring to a boil and reduce the heat when it is boiling. Let simmer for 5 minutes.
Step 3: Add the fish sauce, sugar the juice of half a lime and stir well. Cook for 5 minutes.
Step 4: Add the rice noodles and cook until they are done (see preparation on the package). Divide the soup over the soup bowls and garnish with fresh coriander and a lime wedge.
