Crispy rice paper with salmon

This appetizer will amaze everyone, while it really isn’t that much work to make at all. Use a microwave or a pan with a dash of oil to make the rice sheets crispy (think of the texture of krupuk). Use the crispy rice paper as an interesting way to serve your dish!

Ingredients

For 4 people

  • Rice paper: 1
  • Salmon: 100 g
  • Sprouts : 1 container
  • Raddish: 4
  • Hazelnut: a handfull
  • Lemon: 1
  • Crème fraîche: 100 g

Preparation method

Step 1: Cut the rice paper into quarters and place in the microwave for 30-60 seconds. Take them out of the microwave when the whole sheet has puffed and no pieces look glassy anymore. Optional: use a pan with a layer of oil if you don’t have a microwave. When the oil is hot, drop a piece of rice paper into the pan. After 5 seconds the rice paper is ready for use.

Step 2: Cut the salmon into small cubes or as thinly sliced sashimi. Cut the radishes into quarters. Roughly chop the hazelnuts and roast until you can smell the aromas. Mix the crème frache with the juice of half a lemon and the zest. Put the mixture in a piping bag.

Step 3: Time to Assemble! Top the rice sheet with the sprouts, thinly sliced salmon, radish, nuts and tufts of lemon crème frache.
