Because you mix the fish with the red curry in a foil packet, the fish gets a delicious taste. For variation you could also use one of the other curry pastas. The Koh Thai Red Curry paste is a 100% natural Thai herb paste based on red peppers, lemongrass and a bit of cardamom.
The color and taste get this curry paste of dried red peppers. The red curry paste is slightly milder and rounder than the green curry paste.
Serves 2
Step 1: Preheat the oven to 180 degrees. Mix the curry paste with the coconut milk and the juice of half a lime.
Step 2: Fold two ‘trays’ of aluminum foil/baking paper and place the cod fillets here. Divide the mixture with coconut milk over the two packages. Fold well so that nothing can run out.
Step 3: Put the packages in the oven for 20 minutes or until the cod fillets are done. Serve with a wedge of lime and fresh coriander.
Serving tip: nice with Pandan / Jasmine rice.
