Salmon burger with red curry paste

This salmon burger is filled with healthy fats and is a good alternative to the regular beef burger.

 

You can eat this on a sandwich but it is at its best eaten with a delicious green salad.

Ingredients

  • Salmon filet (without skin) : 300 g
  • Koh Thai Red Curry Paste : 2 tbsp
  • Ginger, grated : 1 pcs
  • Soy sauce : 1 tsp
  • Cilantro (half chopped, half leaves picked) : 1 bunch
  • Oil : 1 tsp
  • Lemon slice : to serve
  • Panko or breandcrumbs

Preparation

Step 1 Place the salmon in pieces into a food processor together with the curry paste, ginger, soy and chopped cilantro. Pulse until you have a rough mixture.

 

Step 2 Place the mixture into a bowl and shape into 2-3 burgers. Place the panko on a plate and roll each burger through it carefully until covered with breadcrumbs.

 

Step 3 This is an optional step. It will be equally delicious without the breadcrumbs. Heat the oil in a non stick pan and bake slowly for about 4-5 minutes each side until golden and crispy.

 

Step 4 Serve with a green salad or a good bun
