As a starting point for this delicious Meal in a Bowl, we used one of our favorite recipes: the (Not so) Spicy Thai noodles. To make it a fulfilling meal, we add grilled baby broccoli and chicken. A feast for the eyes and your taste buds!
(for 2 people)
Step 1: Place a grill pan on the fire, heat it up and grill the baby broccoli (mixed with some oil, salt and pepper) for about 10 minutes. Turn halfway through.
Step 2: Make the (Not so) Spicy Thai noodles according to the recipe. In step 2, add the chicken breast and bake according to the preparation time on the package. At the last minute, add the spinach, noodles and the rest of the ingredients. Stir fry for about 1-2 minutes, until the sauce has thickened and the noodles are completely covered.
Step 3: Serve immediately with the grilled baby broccoli, coarsely chopped Thai basil and peanuts.
