The Sweet Soy wok sauce from Koh Thai is based on soya.

Step 1: Clean the sprouts. Bring water to boil and boil the sprouts for 5 minutes. Drain well. Cut the red onion.
Step 2: Mix the eggs with 1 tbsp Sweet Soy wok sauce and 1 tbsp water. Heat 1 tbsp oil in a frying pan and pour ½ of the egg mixture into the pan. Fry the omelet in 2 minutes per side until golden brown and done. Fry the other half of the egg mixture. Roll up the omelets and cut into 1 cm circles.
Step 3: Cook the rice noodles according to the preparation method and drain.
Step 4: Heat 1 tbsp oil in a wok and fry the onion. Add the sprouts and stir them for 5 minutes over high heat. Add the bean sprouts and cook for another 2 minutes. Now add the remaining Sweet Soy wok sauce and rice noodles and mix well.
Step 5: Divide the sprouts and omelet rolls over the plates.
