Thai meatballs in red curry

You can’t keep your hands off this dish! The flavorful, creamy curry pairs perfectly with the spicy meatballs. A colorful spectacle on your plate!

Ingredients

For 4 people

  • Koh Thai red curry paste: 1 sachet (70gr)
  • Koh Thai coconut milk: 400 ml
  • Ground beef: 500 g
  • Fresh ginger, grated: 3 cm
  • Red chili peppers: 1
  • Egg: 1
  • Green beans: 200 g
  • Cherry tomatoes: 200 g
  • Rice: 300 g

To garnish

  • Handful of fresh parsley
  • Lime: 1, in wedges

Preparation method

Step 1: Cook the rice according to the instructions on the package. Top the green beans and cut in half.

Step 2: Mix the ground beef with the finely grated ginger, chopped red pepper and the egg. Roll about 16 balls (4 per person) with damp hands with the beef mixture.

Step 3: Heat oil in a frying pan and fry the balls until golden brown on all sides for about 5 minutes. Add the curry paste and fry for 1 minute. Then add the cherry tomatoes, green beans and coconut milk. Let it simmer for 10 minutes. Stir occasionally.

Step 4: Serve the curry with rice, a wedge of lime and parsley.
