Thai peanut noodles with jackfruit

Attention peanut (butter) lovers: this recipe is right up your alley!

These Thai peanut noodles will make you want to lick off your fingers, I swear. This easy meal is nutritious, has lots of fresh veggies and chewy young jackfruit.

Ingredients

For 4 people:

  • Koh Thai pre-cooked thick udon noodles: 2 bags
  • Koh Thai young jackfruit: 1 can
  • Spring onion: 2
  • Bell pepper: 1
  • Cucumber: 1
  • Carrot: 1 bag (150g)

The peanut sauce:

  • Peanut butter: 140 g
  • Soy sauce: 3 tl
  • Koh Thai sriracha: 2 tl
  • Honey: 2 tl
  • Sesame oil: 1 tl
  • Lime: 1/2 (the juice)
  • Garlic: 1 clove

Preparation method:

Step 1: Cut the bell pepper into thin strips. Do the same with the cucumber, after removing the seed thrush. Cut the spring onions into rings.

Step 2: For the peanut sauce: press the garlic clove over a bowl. Add all liquid ingredients as well. Mix together with the peanut butter and 70 g lukewarm water until smooth.

Step 3: Rinse the jackfruit and fry (medium heat) for about 25 minutes in 2 tbsp oil or until the flesh falls apart.

Step 4: Prepare the noodles according to the preparation method on the package.
